
This cake is for those who are looking for a healthy recipe and love bananas and dates. A delicious cake that contains only natural sugar.
Ingredients:
1 cup of Medjool dates, pitted
3 ripe bananas
2 eggs
1/4 cup plain yogurt or sour cream
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
Pinch of salt
Teaspoons ground cinnamon
1/2 teaspoon vanilla bourbon
½ cup walnuts, coarsely chopped
Instructions:
Preheat the oven to 180 degrees Celsius
Add dates in food processor, blend until they from a soft paste (Tip: Soak dates in water for about one hour before blending)
Add bananas, eggs and yoghurt/sour cream to the food processor, stir well to combine.
Whisk dry ingredients in a bowl: flour, baking soda, baking powder, salt, cinnamon, vanilla bourbon and walnuts until well-combined.
Whisk date-banana mixture with dry ingredients
Add mass to greased rectangular cake tin and bake for 60 to 75min
Cake will be pretty soft when taken out of the oven. Let it rest
